Description

Penette ("ette" is the diminutive suffix and means "little") are perfect for cradling the incredibly rich and delicious sauce in this elegant dinner party dish. Cream cheese makes the sauce especially luxurious, and it pairs perfectly with the smoked salmon that's also included in the sauce as well as the caviar that's used as a garnish. If beluga caviar is beyond your budget, you can use salmon or trout roe instead.

Ingredients

US|METRIC
  • 400 grams pasta (Pennette)
  • caviar
  • smoked salmon (cut into thin strips)
  • 1/2 shallot (sliced finely)
  • 2 tablespoons butter
  • brandy
  • cream cheese
  • 1 cup milk
  • ground nutmeg
  • salt

Directions

  1. Cook the pasta until ‘al dente’.
  2. In the meantime, melt the butter in the wok.
  3. Add the shallot and saute for a few minutes.
  4. Add the salmon and saute for two minutes.
  5. Add a few drops of brandy.
  6. Combine the cream cheese with the milk.
  7. Add it to the ingredients in the wok and cook until creamy.
  8. Season to taste with salt and add a pinch of nutmeg.
  9. Drain the pennette pasta and add it to the wok, stir for a few minutes to combine well.
  10. Place the pasta in a serving platter, sprinkle it with the caviar and serve.
