This recipe for Penne with Black Kale, Gorgonzola, and Walnuts is a decadent and savory meal for two that only takes 20 minutes to prepare. This recipe combines the heartiness and bite of the lacinato kale with the tartness of gorgonzola cheese for a flavor sensation.

Ingredients

  • 10 stems lacinato kale
  • 400 grams noodles (whole-wheat penne, cooked)
  • 60 grams gorgonzola
  • 30 grams walnuts
  • 1/2 lemon zest (organic)
  • olive oil
  • 1 garlic cloves

Directions

  1. Remove kale leaves from stem and wash. Cut into medium sized pieces. Heat a large pot of salted boiling water, and cook the kale for 7 minutes. Drain.
  2. Cook the noodles.
  3. Pour a tablespoon of oil in a frying pan, add the garlic (unpeeled just crushed under a knife's blade), add kale, and fry for 4 to 5 minutes, season with salt. When the pasta is cooked, add to frying pan, stir, and cook for 2 to 3 minutes, add the walnut pieces.
  4. Serve the noodles on plates, sprinkle with crumbled Gorgonzola, lemon zest, a little olive oil, and pepper.
