Peking Duck Lettuce Wraps

Ingredients

  • 2 tablespoons vegetable oil
  • 3 1/2 ounces fresh shiitake mushrooms (finely chopped)
  • 1 shallot (finely sliced)
  • 1 clove garlic (minced)
  • 1 roast (Peking duck, flesh finely chopped)
  • 10 ounces water chestnuts (finely chopped)
  • 1 carrot (cut into matchsticks)
  • 2 tablespoons shao hsing wine
  • 1/4 cup hoisin sauce
  • 2 tablespoons light soy sauce
  • 3 1/2 ounces snow peas (thinly sliced lengthwise)
  • 3 1/2 ounces bean sprouts

Directions

  1. In a wok or large frying pan, heat oil until very hot. Stir-fry mushrooms, shallot and garlic for 1 min. Add duck meat, water chestnuts and carrot. Stir-fry for 1 min. Deglaze with wine. Add hoisin sauce and soy sauce. Bring to a simmer and cook for 1-2 mins, until sauce thickens. Remove from heat. Add snow peas and bean sprouts. Toss to combine.
  2. Serve in lettuce cups.
