Ingredients

  • 140 grams softened butter
  • 140 grams granulated sugar
  • 3 eggs
  • 50 grams ground hazelnuts
  • 30 grams chopped hazelnuts
  • 200 grams flour
  • 1 teaspoon baking powder
  • 1 pear (large)
  • 80 grams raisins
  • 30 grams butter
  • 30 grams granulated sugar
  • 30 grams chopped hazelnuts
  • 30 grams flour

Directions

  1. Preheat oven to 160 degrees Celsius.
  2. In a medium bowl, beat butter and sugar until creamy.
  3. Add the eggs and ground hazelnuts, chopped hazelnuts, flour and baking powder.
  4. Mix well until smooth.
  5. Peel the pears, cut them into small cubes
  6. Add pears and raisins (coated with a little flour) to the batter.
  7. Pour the batter into a baking sheet lined with parchment paper.
  8. In a small bowl, prepare the crumble. Combine butter, sugar, hazelnuts, and flour with a pastry cutter until crumbly.
  9. Sprinkleon top of the cake batter and bake for about 1 hour.
  10. Let cool before unmolding.

I omitted the raisins when I made this but added extra pears to make up the difference. I diced mine very small, and I love how moist this crumble cake was.
