Sweet pears and pungent goat cheese have long been partners in salads, and this one builds on that tradition. The recipe teaches a couple of neat flavor-building steps: First, the goat cheese slices are seared with a small kithen torch until browned in spots; you can do this under the broiler, too, but watch carefully for burning. Then the balsalmic vinegar is reduced to a thick, sweet syrup, which is drizzled over the salad before serving.

Ingredients

  • goat cheese (sliced)
  • balsamic vinegar
  • lettuce
  • 1 pear (cored and sliced)
  • salt
  • ground black pepper
  • olive oil

Directions

  1. Sear the slices of goat cheese with a kitchen torch.
  2. Make a reduction of balsamic vinegar by heating it in a pot on medium heat until 1/3 of the original volume remains.
  3. Make a bed of lettuce, then a layer of pear and the seared goat cheese on top. Season with salt and pepper and dress with the balsamic vinegar reduction and olive oil.

This has to be one of the most appetizing salads I have ever made. The sweetness of the pears really brought out the other aspects of the salad and the goat cheese gave it a bold and robust taste. Definitely a 4 star salad I plan to use as a substitute to my plain old salads.
