Fluffy and light, these Pear and Cranberry Muffins are full of fruity winter flavors. Diced pears are suspended throughout these scrumptious muffins with a hidden layer of cranberry jam in the middle. The combination of sweet and tart in these wintry muffins is masterful. Garnish these muffins with a dusting of powdered sugar to create the illusion of freshly fallen snow. You can substitute the cranberry jam for another jam if you prefer another flavor.

Ingredients

  • 200 grams white flour
  • 1 package yeast
  • 200 grams quark cheese
  • 100 grams sugar
  • 100 grams butter (melted)
  • 2 pears (medium-sized, peeled and sliced into small pieces)
  • 2 eggs
  • 150 grams cranberry jam
  • powdered sugar (for garnish)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Mix the white flour with the yeast in a large bowl.
  3. Mix the eggs, Quark cheese, sugar, and butter, and add it to the large bowl.
  4. Add the small pear pieces to the bowl and mix.
  5. Fill the muffin molds half-full, spread the cranberry jam on top, and cover with the remaining dough.
  6. Bake for 25 minutes.
  7. Remove from the oven, let them cool off completely, sprinkle the powdered sugar on top, and serve.

I could wake up to the smell of these muffins and eat them all morning! The combination of pear and cranberry jam blend well while retaining their own unique flavors. I like to break these open while still warm and spread with softened cream cheese.
