Description
This Pear and Almond Cream Tart is full of rich and creamy flavors making it a wonderful fall or winter dessert. Featuring pears cooked in a sweet wine sauce atop a thick almond cream, a light pastry cream adds the final touch to this delicious Pear and Almond Cream Tart. Make your own pie crust, or you can opt to purchase one premade. You will need to blind bake the crust in order to make sure you do not end up with a soggy bottom.
Ingredients
- 4 pears (firm)
- 100 grams sugar
- 250 grams wine (moscato)
- 3 large eggs
- 750 grams milk
- 150 grams sugar
- 50 grams rum
- 60 grams flour
- 2 eggs
- 100 grams sugar
- 100 grams almond flour
- 100 grams butter (softened)
- 1 wine (splash moscato)
- 300 grams pastry cream
Directions
- 1Preheat the oven to 180 degrees Celsius. Peel the pears and cut them lengthwise removing the heart and seeds.
- 2Add the pears, sugar, and wine to a non stick pot and bring to the boil. Simmer on low 10 minutes until the pears are tender.
- 3Strain the liquid and add to the heat again to thicken and caramelize. Set aside to cool.
- 4Bake the pie crust 12 minutes then set aside to cool.
- 5Then make the pastry cream. Add the eggs, milk, sugar, rum, and flour to a double boiler. Constantly stir until the mixture thickens.
- 6Pour the cream into a shallow container, cover with plastic wrap directly touching the cream, and let cool.
- 7Next, make the almond cream. Beat together the eggs, sugar, almond flour, butter, and wine until combined. Then add in 300 grams of the pastry cream you previously made.
- 8Pour the almond cream into the cooled pie crust.
- 9Add in the pear halves cut side down in a circle.
- 10Bake 30 minutes until set and golden. If possible, cool outside the pan for a crispier crust.
