  • 1 liter cranberry juice
  • 60 grams brown sugar
  • 1 vanilla pod
  • 2 star anises
  • 2 cinnamon sticks
  • 2 cloves
  • 6 pears
  • red food coloring (optional)


  1. Mix together the cranberry juice, the sugar, the vanilla, and the spices in a large saucepan. Bring to a boil.
  2. Peel the pears and poach them in the juice for about 25 to 30 minutes (depending on the size of the pears) then remove from heat. Add coloring if you want to.
  3. Let cool and refrigerate. Serve chilled.

When I make this I am certain to purchase cranberry juice that does not have any added sugar. I find the brown sugar sweetens this perfectly enough. It’s absolutely beautiful to look at when it’s ready to serve.
