  • 1/3 cup skippy natural creamy peanut butter spread with honey
  • 1/3 cup apricot preserves
  • 1 tablespoon apple cider vinegar
  • 1/8 teaspoon ground chipotle chile pepper
  • 2 tablespoons water
  • 2 tablespoons chives (chopped, divided)
  • 2 green bell pepper, sliced
  • 1 pound boneless, skinless chicken thighs
  • 24 cherry tomatoes

    Directions

    1. Microwave Skippy® Natural Creamy Peanut Butter Spread with Honey and apricot preserves in microwave-safe measuring cup or bowl 30 seconds or until melted; stirring once. Stir in water, vinegar, chipotle pepper and 1 tablespoon chives. Reserve 1/3 cup for dipping.
    2. Alternately thread chicken, green peppers and cherry tomatoes on 12 skewers*. Grill or broil, turning occasionally and brushing frequently with peanut butter sauce, 15 minutes or until chicken is thoroughly cooked.
    3. Arrange kabobs on platter, then sprinkle with remaining chives and serve with reserved sauce.
