Roasted peanuts are not just for eating as bar snacks with a frosty beer. Here they are the star of a tasty filling for pie. The easy dough is made with an electric mixer and spread in the pie plate before baking on its own; this helps keep it from getting soggy from the filling. The filling is made by boiling roasted peanuts with a milk mixture, and this is then poured into the shell and baked until set.

150 grams flour
100 grams sugar
90 grams butter
1 eggs
2 tablespoons milk
150 grams sugar
100 grams butter
150 grams peanuts (roasted in honey)
2 tablespoons milk

1Preheat the oven to 180 degrees Celsius.
2Grease and flour a pie pan.
3In a bowl, add the flour, sugar, butter, and milk. Beat with a spoon or an electric mixer.
4Spread the dough in an even layer in the pie pan and bake for about 15 minutes.
5To prepare the topping, bring the sugar, butter, and milk to a boil in a small saucepan. Lower the temperature and simmer for 5 minutes.
6Add the peanuts and boil for an additional 2 or 3 minutes.
7Place the topping on top of the dough and bake for another 5 minutes or until golden brown.
