Ingredients

  • 1 cup brown sugar (Packed)
  • 2/3 cup crunchy peanut butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 3/4 cup wheat flakes (Crushed whole)
  • 1 cup margarine (or butter,softened)
  • 1 egg
  • 1 1/2 cups unbleached all purpose flour
  • 1/4 teaspoon salt

Directions

  1. Mix brown sugar, margarine, peanut butter, egg and vanilla. Stir in flour, baking soda and salt. Cover and refrigerate at least 2 hours.
  2. Heat oven to 350 degrees F. Shape dough into 1-inch balls; roll in cereal. Place about 2 inches apart on ungreased cookie sheet. Bake until almost no indentation remains when touched, 12 to 13 minutes.
