  • 1 cup white flour
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup water
  • 1/3 cup soy milk
  • 2 teaspoons vanilla extract
  • 1 cup sugar
  • 1/4 cup maple syrup (grade b)
  • 1/2 cup vegan butter (melted)
  • 3/4 cup creamy peanut butter (salted, room temperature)
  • 1/2 cup vegan chocolate chips
  • 2 teaspoons Ener-G Egg Replacer (+ 2 Tbsp water to activate*)
  • cookies (*optional - for fluffier, use Ener-G - for chewier cookies, leave out. I actually didn't use the Ener-G for the cookies in the photos. You can still add in the 2 Tbsp water to sub the liquid part.)
