These gluten free no butter cookies are easy to make and ready in a flash. Made with brown sugar, these cookies have rich caramel flavor that complements the saltiness that the peanuts bring. This recipe recommends using honey roasted peanuts for added flavor.

Ingredients

  • 125 grams honey roasted peanuts
  • 1 small egg
  • 100 grams brown sugar
  • 1 tablespoon peanut butter

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Prepare a baking tray with a nonstick mat, or line with parchment paper. Set aside.
  3. Begin by chopping the peanuts coarsely for a few seconds in the blender.
  4. Add the egg, and beat.
  5. Add peanut butter, and beat again.
  6. Finally, add sugar, and mix all very well.
  7. With a dessert spoon (2 teaspoons), slightly space small portions of dough on the tray.
  8. Flatten slightly with the bottom of the spoon.
  9. Bake for about 15 minutes, or until they're golden brown.
  10. Remove from oven, and let rest for 5 to 10 minutes. Cool on a rack. Store in an airtight container.

Tried it this past weekend. I can't say I'd change a thing. I like my peanut butter but I think the teaspoon of it was just the right amount for this recipe because you also have the honey roasted peanuts in there. Great recipe! I plan on doing these again for my cousin's graduation party next week.
