Description

These gluten free no butter cookies are easy to make and ready in a flash. Made with brown sugar, these cookies have rich caramel flavor that complements the saltiness that the peanuts bring. This recipe recommends using honey roasted peanuts for added flavor.

Ingredients

125 grams honey roasted peanuts
1 small eggs
100 grams brown sugar
1 tablespoon peanut butter

Directions

1Preheat oven to 180 degrees Celsius.
2Prepare a baking tray with a nonstick mat, or line with parchment paper. Set aside.
3Begin by chopping the peanuts coarsely for a few seconds in the blender.
4Add the egg, and beat.
5Add peanut butter, and beat again.
6Finally, add sugar, and mix all very well.
7With a dessert spoon (2 teaspoons), slightly space small portions of dough on the tray.
8Flatten slightly with the bottom of the spoon.
9Bake for about 15 minutes, or until they're golden brown.
10Remove from oven, and let rest for 5 to 10 minutes. Cool on a rack. Store in an airtight container.
