  • 1 lime
  • 3 tablespoons fresh lime juice
  • 1/4 cup crystallized ginger (diced)
  • 3 allspice berries (or a few more)
  • 3/4 cup sugar (divided)
  • 1/2 cup water
  • 1/4 cup apple cider (or unfiltered apple juice)
  • 1 ground black pepper (brief turn fresh)
  • 2 teaspoons pectin (Pomona's, see note in step 7)
