Description

If pie is on your mind and you can’t decide between peach or coconut, then try this Peach and Coconut Pie. It takes 55 minutes to prepare, and the taste will take you to pure sweet heaven. Ingredients include shortcrust pastry, peach jam of your choice, eggs, sugar, melted butter, dried shredded coconut, and powdered sugar. This pie will be gone in minutes and it will become the family favorite.

Ingredients

1 shortcrust pastry
peach jam (or other preferred)
4 eggs
175 grams sugar
100 grams butter (melted)
125 grams shredded coconut (dried)
powdered sugar

Directions

1Preheat oven to 200 degrees Celsius.
2Line a round pan with a removable bottom with parchment paper, or grease with butter.
3Spread the pastry dough in the pan, and prick the bottom with a fork.
4Spread a little peach jam on the bottom of the pan, covering completely.
5In a bowl, beat the eggs with the sugar until mixture whitens.
6Add the melted butter, and mix. Add the coconut, and blend well.
7Pour the cream in the pie pan, and cover with more peach jam.
8Bake for 35 to 40 minutes, or until golden.
9Let cool completely, and unmold.
10Sprinkle the tart with powdered sugar before serving.
