Peach and Cherry Jello Trifle

Ingredients

  • 3 ounces jello (package dark red, mix, eg, strawberry, dark cherry)
  • 2 1/2 cups heavy cream
  • 1/3 cup powdered sugar
  • 8 3/4 ounces swiss roll (sliced)
  • 1/2 cup sherry (or a liqueur of choice)
  • 14 ounces peaches (cans, drained)
  • 10 1/2 ounces frozen cherries
  • 1 3/4 ounces macadamia nuts (toasted, roughly chopped)

Directions

  1. Prepare Jello following package instructions. Chill until firm. Chop roughly.
  2. In a large bowl, using an electric mixer, whip the cream and powdered sugar until soft peaks form. Chill.
  3. Arrange half the cake slices over the base of a 8 cup serving bowl. Drizzle with sherry.
  4. Top with half the fruit, half the Jello and half the whipped cream. Repeat with remaining ingredients, finishing with a whipped cream layer. Chill, covered, for several hours or overnight. Serve topped with macadamia nuts.
