  • 1 cup lettuce (assorted)
  • 1/2 peach (sliced)
  • 1/2 apple (small, sliced)
  • 3 almonds (chopped)
  • 1/2 cup goat cheese (crumbled)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • salt
  • ground black pepper


  1. Place the lettuce, peach, and apple in a salad bowl.
  2. Add the goat cheese and almonds, and drizzle the olive oil and balsamic vinegar on top. Season with salt and pepper to taste and serve.

Salads can get boring when you're on a diet, or just cutting back. However, this salad takes things to a whole new level. I love the tangy flavor combinations that pair together so well. The goat cheese also has a unique taste that just takes the whole recipe up another notch. I often make this for summer picnics.
