Ingredients

  • 8 3/4 ounces haloumi cheese (cut into bite-sized pieces)
  • 12 ounces penne pasta
  • 5 1/4 ounces fresh peas (or frozen)
  • 4 spring onions (roughly chopped)
  • 2 teaspoons lemon juice
  • 1/3 cup heavy cream
  • 1 handful fresh mint leaves
  • 2 ounces parmesan cheese (grated, a little reserved for garnish)

Directions

  1. Preheat broiler. Broil haloumi for 5 mins, turning once. Keep warm.
  2. Cook pasta in boiling salted water until al dente. Drain, reserving 2 tbsp cooking water. Return pasta to saucepan.
  3. Meanwhile, cover peas and spring onions with boiling water. Let stand for 5 mins, or until tender. Drain.
  4. In a food processor or blender, combine 3/4 the pea and onion mixture with reserved cooking water, lemon juice, cream, 1/2 the mint and Parmesan. Purée until smooth. Season then toss with pasta. Fold in remaining mint and peas. Spoon between serving bowls and top with haloumi and reserved Parmesan.
