Ingredients

  • 8 philo sheets
  • 240 grams grated parmesan cheese
  • 400 grams frozen peas
  • 40 grams pine nuts
  • 4 tablespoons olive oil
  • fresh basil

Directions

  1. In a saucepan cook frozen peas in boiling water.
  2. When cooked, rinse them under cold water.
  3. In a medium bowl, combine the peas, 3-4 tablespoons of olive oil, 40 gr. grated parmesan and pine nuts.
  4. Mix with a hand-held mixer and season with salt and pepper. Set aside.
  5. Preheat the oven to 180 degrees Celsius.
  6. Cut rectangles of filo pastry using scissors.
  7. Brush with melted butter.
  8. Arrange philo rectangles on a baking sheet lined with parchment paper.
  9. Bake until brown.
  10. With a vegetable peeler, make Parmesan chees shavings. Set aside
  11. To assemble napoleons, place a layer of philo pastry, top with parmesan savings, pea pesto and chopped basil leaves.
  12. Repeat one more time.

I was astonished at how well this recipe turned out. The pea pesto napoleons were very savory and encased with so much flavor I just couldn't get enough.
