Ingredients

  • 200 grams pasta
  • 2 cups spinach (sliced)
  • 6 slices salami (sliced into strips)
  • 50 grams goat cheese
  • 4 tablespoons parmesan cheese (shredded)
  • 2 tomatoes (medium, diced)
  • 2 tablespoons red onion (minced)
  • 1 garlic cloves (peeled and minced)
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • salt
  • ground black pepper

Directions

  1. 1Heat water in a large cooking pot at high heat. Once boiling, cook pasta for 8 to 10 minutes, turn off the stove, strain, and let it cool off completely.
  2. 2Mix the tomato, onion, garlic, olive oil, red wine vinegar, and a pinch of salt and black pepper in a large salad bowl.
  3. 3Add the pasta, salami, spinach, goat cheese, and Parmesan cheese. Mix slowly and serve.
