Ingredients

  • 3/4 cup short-cut pasta
  • 1 tablespoon vegetable oil
  • 1 1/2 boneless skinless chicken breasts (cubed)
  • 1 zucchini (small, sliced)
  • 1 teaspoon red wine vinegar
  • 2 teaspoons olive oil
  • salt
  • ground black pepper
  • 1/3 cup artichokes (pickled, chopped)

Directions

  1. 1Cook the pasta in salted, boiling water for about 8 to 10 minutes. Drain the pasta and set aside.
  2. 2Add the oil to a skillet on medium heat and saute the chicken for a few minutes, stirring often.
  3. 3Add the zucchini to the skillet and saute for a few minutes. Set aside.
  4. 4In a bowl, mix the vinegar, olive oil, and a pinch of salt and black pepper, together to make the dressing.
  5. 5Add the pasta into the bowl with the zucchini and chicken. Add the dressing and mix everything well.
  6. 6Top with artichokes and serve.
