Description
In this delightful dish, cream sauce that is inflected with onions and saffron cloaks pasta that's been cooked al dente; then, it's garnished with thyme and grated Parmesan. The saffron lends its yellow hue, while the Parmesan imparts nuttiness and a salty bite. Collectively, the dish feels special even though it's not taxing to prepare. Use stracci or maltagliati if you can.
Ingredients

- 30 grams butter
- 1 onion (peeled and diced)
- 200 milliliters milk
- 80 grams heavy cream
- 0.1 grams saffron
- salt
- 350 grams pasta (such as stracci or maltagliati)
- fresh thyme
- parmesan cheese (grated)
Directions
- Add the butter to a skillet on medium heat. Add the onion and saute for 5 minutes.
- Add the milk and cook on a low heat for 5 minutes.
- Add the cream, saffron, and a pinch of salt and cook for a further 5 minutes.
- Meanwhile, cook the pasta in boiling salted water until al dente, about 8 to 10 minutes.
- Drain the pasta and add it to the sauce.
- Garnish with thyme and serve sprinkled with Parmesan cheese.

I used fresh, chopped basil and oregano to add brightness to this dish and doubled the cream, butter and cheese. I also minced and sautéed some garlic to add to the sauce. This recipe is a great base to top
