Ingredients

  • 1 tablespoon oil
  • 1 onion (thinly sliced)
  • 1 clove garlic (minced)
  • 2 1/2 ounces mushrooms (sliced)
  • 1 2/3 cups evaporated milk
  • 9 ounces spaghetti (cooked, kept hot)
  • 1 tablespoon fresh parsley leaves (chopped)
  • cheddar cheese (grated, to serve)

Directions

  1. Heat oil in a large frying pan over low heat. Cook onion and garlic, covered, stirring occasionally, for 2-3 mins, until tender. Add mushrooms and cook, stirring, for 2-3 mins. Add evaporated milk and bring to a boil. Reduce heat to low and simmer for 5 mins. Add spaghetti and parsley and toss to combine. Season.
  2. Serve topped with grated Cheddar cheese.
