Ingredients

  • 250 grams spaghetti
  • 2 tablespoons heavy whipping cream
  • 1 garlic clove (finely chopped)
  • 1 teaspoon chili pepper (arbol, ground)
  • 3/4 cup cotija cheese (ground)
  • ground black pepper
  • 1/2 cup corn kernels (cooked)

Directions

  1. Boil water using a large cooking pot at high flame. Once boiling, add the pasta and cook for 7 minutes. Turn off the stove, strain, and let it cool off.
  2. Heat the heavy whipping cream, garlic, and arbol chili pepper in a medium cooking pot at low flame for 5 minutes. Turn off the stove, add the Cotija cheese, and mix.
  3. Add the spaghetti to the cooking pot where the cream is, season with pepper to taste, mix, and serve with corn kernels on top.

My family really enjoyed this recipe! The only changes I made were based off what I had on hand. I used half and half instead of heavy whipping cream, and canned corn instead of frozen. It turned out great! My 3 year old and 15 month old loved it as much as my husband and I. Will make this again.

Cojita cheese is a natural complement to pasta. I mixed melted butter, Italian herbs and the cojita cheese over warm pasta and it tasted like gourmet macaroni and cheese. Warm French bread would be great with this pasta.
