Description

Take a culinary journey to the seaside tonight with this recipe for Pasta with Clams. Featuring spinach tagliatelle, steamed clams, and sauteed vegetables in a white wine sauce, this pasta dish is light and flavorful, filling but not too heavy in your belly. This recipe elects to use garlic, celery, and carrots as its vegetables of choice but you can substitute or supplement with your own favorite vegetables. This recipe is extremely versatile and adaptable to personal preference.

Ingredients

  • 250 grams spinach (fettucini)
  • 1 clove garlic (minced)
  • 2 stalks celery (diced)
  • 2 carrots (diced)
  • 50 grams peas
  • 1 cup white wine (plus additional)
  • salt and ground black pepper
  • olive oil

Directions

  1. Steam the clams in a large pot with the wine, a dash of salt, and a little water until opened.
  2. Prepare the pasta according to the instructions on the package, adding a little of the clam juice to the water. Drain when al dente.
  3. Place the garlic, celery, and carrot into a skillet and boil for 5 minutes. Add a little wine to the vegetables and cook until absorbed.
  4. Add the pasta and clams to the skillet and cook together for a few moments. Season with salt and pepper.
