Description

This simple pasta salad comes together in about 30 minutes and requires only 10 ingredients to pull together. Al dente pasta is mixed with lean chicken breast, capers, goat cheese, and olives for a hearty and filling meal. A simple dressing of thyme, olive oil, salt, and pepper is all that is needed to bring the dish together. This is a great salad to bring to a barbeque or casual summer party.

Ingredients

  • 2 cups short-cut pasta
  • 2 chicken breast halves (skinless and deboned)
  • 1 tomatoes (seeded and chopped)
  • 1 teaspoon capers (chopped, optional)
  • 50 grams goat cheese (crumbled)
  • thyme
  • 1 tablespoon olives
  • 1 tablespoon olive oil
  • salt
  • ground black pepper

Directions

  1. 1Cook the pasta following the instructions on the package, al dente.
  2. 2Meanwhile, cook the chicken in a hot skillet until golden brown on both sides. Cut into medium pieces.
  3. 3In a salad bowl, add the tomato, capers, chicken, goat cheese, pasta, and olive paste. Mix carefully, adding the olive oil at the end. Season with salt and pepper to taste and serve.
