  • olive oil (for frying)
  • red onion (or shallot, chopped)
  • 1 handful arugula
  • 1/2 pound smoked salmon (leftover cooked kippered or regular)
  • peas (optional)
  • cherry tomatoes (halved, I didn't have them, but will add them in next time for color!)
