  • 1/4 cup olive oil
  • red pepper (1 lg., seeded and sliced into ¼ inch slices)
  • yellow pepper (1 lg. sweet, seeded and sliced into ¼ inch slices)

  • 1/2 cup dry white wine
  • 2 cups chicken broth
  • 1/2 pint heavy cream
  • 1 tablespoon chopped parsley (finely)

  • 1 pound pasta (favorite, cooked)
  • 1/2 cup grated Parmesan cheese

    Directions

    1. In a large skillet, heat olive oil. Add red and yellow peppers, shallots and mushrooms. Saute until crisp tender. Set aside.
    2. Add wine, broth and cream; simmer until thickened. Add cooked vegetables, parsley and salt and pepper to taste. Pour over pasta, mixing well. Top with Parmesan cheese. Serves 4.
