we were pleasantly surprised with this recipe. i was requested to make a cheesy cauliflower pasta for dinner and made this as a healthier alternative. it sounded like such a strange pairing of ingredients that i had to try it and i'll definitely make it again. it was light and flavourful and full of good ingredients. we think it would even be good as a summer salad served cold, made with penne noodles.
