Tender pasta, soft-boiled eggs, and sardines are the perfect trio in this salad. A sauce made of yogurt and fresh herbs tops it all off ensuring that each bite is perfect. This salad is great to enjoy in the summer when you want a low effort meal that is packed with flavor. You can enjoy the salad as a lunch or dinner, the leftovers store well in the refrigerator.

Ingredients

  • 150 grams pasta shells (whole)
  • 2 eggs
  • lettuce
  • 1 tablespoon olive oil
  • 1/2 teaspoon oregano
  • 1 natural yogurt
  • 1 garlic clove
  • 1 sprig parsley
  • 1 bunch chives
  • salt (flower)
  • lemon juice (to taste)
  • 1 teaspoon olive oil
  • 1 can sardine fillets (in olive oil)
  • 1/2 red onion
  • 100 grams cheese (in cubes)

Directions

  1. Boil some water seasoned with salt , and cook the pasta for 14 minutes.
  2. Cook the eggs for 6 minutes, remove from pan, and immediately place them in cold water to stop the cooking.
  3. Wash the lettuce, and place on the bottom of the serving platter.
  4. Drain the pasta after it's cooked, and let cool while you prepare the yogurt sauce.
  5. In a bowl, add the yogurt, garlic, and finely chopped herbs with the remaining ingredients, and stir.
  6. Pour the mixture over the lettuce, add the sardine fillets, red onion cut into half moons, cheese, eggs cut in fourths, and cover with the yogurt sauce.
