Pasta Served With Three FishesHoje para Jantar
- 1 slice salmon
- 1 slice unsalted cod
- 1 mackerel
- 200 grams shellfish
- 300 grams elbow macaroni
- 1 bay leaf
- 2 tomatoes (ripe)
- 1 red pepper
- 1 hot chili
- 1 onions (medium size)
- 2 garlic cloves
- 1 1/2 deciliters olive oil
- 1Cook fish in boiling, salted water for 10 minutes.
- 2Remove fish, drain and let cool.
- 3Reserve fish cooking water.
- 4Remove bones and scales.
- 5Strain the water to remove any scales and set aside cooking water.
- 6In a pan, heat olive oil and slowly braise chopped onion and garlic cloves and olive oil until onion is translucent.
- 7Blanch tomatoes for a few seconds in boiling water. Peel tomatoes, quarter, core and cut into small cubes.
- 8Add diced tomatoes to pan. Dice pepper. Add pepper and laurel to pan.
- 9Cook briefly. Add 300 ml (approximately 1.5 cups) water and cover.
- 10Bring to a boil.
- 11Add shellfish and pasta.
- 12Stir well and season to taste.
- 13When the pasta is almost al dente, fold in prepared fish.
- 14Simmer until pasta is cooked and sauce is creamy.
- 15Remove from heat. To serve, garnish with chopped cilantro.
