Description

Pasta salad is perfect for parties, barbecues, banquets and holidays. This delectable dish is hearty and full of gooey goodness. The dressing is easy to make. Ingredients include light mayonnaise, Dijon mustard, pickled jalapeno brine, salt and pepper. Cook the pasta. Add the toppings, which include chopped sausages, cubed queso panela or mozzarella and shredded Monterey jack cheese, as well as some spicy and tangy ingredeints. It’s a party for your mouth.

Ingredients

1 cup pasta (cooked al dente)
2 sausages (chopped)
2 chilies (pickled jalapeno, diced)
1/3 cup queso panela (cubed, may substitute mozzarella)
1/3 cup jack cheese (Monterrey)
6 olives (minced)
1 tablespoon light mayonnaise
1 teaspoon dijon mustard
1 teaspoon brine (from the pickled jalapenos)
salt and ground black pepper

Directions

1Mix the mayonnaise with the mustard and vinegar.
2Season with salt and pepper.
3Add the pasta, sausage, jalapeno, panela and monterrey jack cheeses, and olives.
4Mix well and refrigerate.
