Ingredients include light mayonnaise, Dijon mustard, pickled jalapeno brine, salt and pepper. Cook the pasta. Add the toppings, which include chopped sausages, cubed queso panela or mozzarella and shredded Monterey jack cheese, as well as some spicy and tangy ingredeints. It’s a party for your mouth.

Ingredients

  • 1 cup pasta (cooked al dente)
  • 2 sausages (chopped)
  • 2 chiles (pickled jalapeno, diced)
  • 1/3 cup panela cheese (cubed, may substitute mozzarella)
  • 1/3 cup jack cheese (Monterrey)
  • 6 olives (minced)
  • 1 tablespoon light mayonnaise
  • 1 teaspoon dijon mustard
  • 1 teaspoon brine (from the pickled jalapenos)
  • salt and ground black pepper

Directions

  1. Mix the mayonnaise with the mustard and vinegar.
  2. Season with salt and pepper.
  3. Add the pasta, sausage, jalapeno, panela and monterrey jack cheeses, and olives.
  4. Mix well and refrigerate.

I have made many pasta salads in my lifetime and this one has to be the absolute best. Easy to make with just the right flavors. I did switch it up and use velveeta cheese and mozzarella instead of the monterrey jack and queso panela. Would give this recipe 4 stars and have already planned to make it again.
