Description
Leave it to the Italians, ever frugal, to come up with a delicious way to turn leftover pasta into a satisfying meal by incorporating it into a frittata. Here, the pasta is sauteed in the skillet to give it a flavor boost, then covered with the seasoned egg mixture and cheese and cooked on the stovetop until the eggs are just set and the surface is wonderfully browned. Serve warm.

- extra virgin olive oil
- sauce
- 5 eggs
- Parmesan cheese
- 1 egg white
- salt
- ground black pepper

Directions
- Saute the pasta in a large pan with some oil for a few minutes until it browns.
- Beat the eggs lightly in a bowl with the grated cheese and mix well. Add the egg white, folding it in carefully with a wooden spoon. Add a pinch of salt and black pepper to taste.
- Add the cheese cubes to the pasta and pour the egg mixture over it.
- in an omelet pan, cook the egg mixture on both sides until golden and soft.
