Leave it to the Italians, ever frugal, to come up with a delicious way to turn leftover pasta into a satisfying meal by incorporating it into a frittata. Here, the pasta is sauteed in the skillet to give it a flavor boost, then covered with the seasoned egg mixture and cheese and cooked on the stovetop until the eggs are just set and the surface is wonderfully browned. Serve warm.

Ingredients

  • pasta
  • extra virgin olive oil
  • sauce
  • 5 eggs
  • parmesan cheese
  • 1 egg white
  • salt
  • ground black pepper
  • fontina cheese

Directions

  1. Saute the pasta in a large pan with some oil for a few minutes until it browns.
  2. Beat the eggs lightly in a bowl with the grated cheese and mix well. Add the egg white, folding it in carefully with a wooden spoon. Add a pinch of salt and black pepper to taste.
  3. Add the cheese cubes to the pasta and pour the egg mixture over it.
  4. in an omelet pan, cook the egg mixture on both sides until golden and soft.

These were a delicious way to eat eggs and pasta. I boiled the pasta for about ten minutes before sautéing in the pan. I used a little butter in my pan to keep the eggs from sticking.
