Ingredients

  • 2 tablespoons butter (melted)
  • 1/2 cup granulated sugar
  • 6 egg whites
  • 10 ounces lemon curd
  • 3 passionfruit (pulp removed, plus additional, to serve)
  • powdered sugar (to serve)
  • whipped cream (to serve)

Directions

  1. Preheat the oven to 400°F. Brush eight 1/2-cups ramekins with the melted butter. Dust with 1/4 cup of the sugar, shaking out excess.
  2. Beat egg whites in a medium bowl with an electric mixer until soft peaks firm. Gradually add remaining 1/4 cup sugar, beating until stiff and glossy.
  3. Mix lemon curd and passionfruit pulp in a large bowl. Gently fold in egg whites in two batches.
  4. Divide mixture evenly among ramekins. Place on a baking pan.
  5. Bake 10-15 mins, until risen and golden. Dust with powdered sugar. Serve immediately with whipped cream and additional passionfruit.

I've made this soufflé many time and it always turns out incredibly. I do however recommend making you own lemon curd too. It doesn't take long and you then know everything that's in it.
