Ingredients

6 tablespoons Hellmann's® or Best Foods® Light Mayonnaise
2 tablespoons grated parmesan cheese
12 ounces boneless skinless chicken breast halves
1 tablespoon seasoned bread crumbs
2 small tomatoes (seeded and chopped,, 1 1/4 cups)
1 cucumber (small, seeded and chopped,, 3/4 cup)
1 tablespoon fresh basil leaves (chopped, or cilantro leaves)
2 teaspoons red wine vinegar
2 cups cooked brown rice

Directions

1Preheat oven to 425°.
2Combine 4 tablespoons Hellmann's® or Best Foods® Light Mayonnaise with cheese in small bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.
3Bake 20 minutes or until chicken is thoroughly cooked.
4Meanwhile, combine remaining 2 tablespoons Mayonnaise, tomatoes, cucumber, basil and vinegar in medium bowl.
5Slice chicken, then evenly top with creamy bruschetta mixture. Serve with hot cooked rice.
