Parmesan Cheese and Salami Fritters

Description

These fritters are quickly deep fried to a deep golden brown color, and the crust will be wonderfully crisp while the inside stays light and airy, thanks to beaten egg whites folded into the batter. Grated parmesan and diced salami are also mixed in; you could use prosciutto or other cured meats in place of the salami. While they are best served hot, in batches, you can keep them warm in a low oven until you finish fyring off all the batter.

Ingredients

  • 150 grams all-purpose flour
  • 50 grams durum wheat flour
  • 5 egg yolks
  • 300 grams milk
  • 1 teaspoon baking powder
  • 100 grams salami
  • 3 tablespoons parmesan cheese
  • 1 teaspoon rosemary
  • nutmeg
  • salt
  • ground black pepper
  • 2 egg whites
  • oil

Directions

  1. 1In a bowl, combine the flours, egg yolks, milk, baking powder, salami, cheese, rosemary, and a pinch each of nutmeg, salt, and black pepper.
  2. 2Add the egg whites and mix gently.
  3. 3Fry the batter spooning it into the hot oil, drain the cakes and serve them immediately while hot.
