Butter, parmesan, flour, water, and salt: Those are the only ingredients you need to bake up a batch of these savory cookies (aka crackers), and you probably always have those on hand. To make these ahead, form the dough into logs, wrap well in plastic wrap, and tuck into a freezer bag. When ready to bake, simply slice off as many rounds as you need and bake for a few minutes longer than called for in the recipe. Once baked, the cookies will keep for a few days at room temperature, but they're best the same day.

Ingredients

  • 175 grams butter
  • 250 grams parmesan cheese (grated)
  • 250 grams flour (sifted)
  • salt
  • ground black pepper

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Cream the butter, then add the Parmesan cheese and mix well. Add the flour and a pinch of salt and black pepper. Knead thoroughly.
  3. Place the dough on the table and stretch until it is 1-centimeter thick. Cut into any desired shape using tin molds.
  4. Place the cookies on a baking sheet. Bake for 10 minutes or until golden brown.

I was a little leary about making this recipe at first because it didn't sound very appealing. However, after enjoying about 4 of them in one sitting; I am so happy I made them. A quick and easy recipe that offers a true parmesan taste that doesn't overwhelm you. I will probably make these 5 star cookies again soon.
