Ingredients

  • 175 grams butter (at room temperature)
  • 175 grams manchego cheese (grated)
  • 190 grams flour
  • 1 teaspoon paprika

  • 2 tablespoons cold water
  • 150 grams raw almonds (sliced)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Mix together the butter, cheese, flour, paprika, and salt until it forms a crumbly mixture. Add the cold water and mix. Stir in the almonds.
  3. Divide the dough into 4 sections and roll into cylinders. Refrigerate for at least 3 hours.
  4. Cut each cylinder into slices approximately 1 centimeter wide and place onto a baking sheet.
  5. Bake for 15 to 20 minutes, until golden brown. Cool on a baking sheet.

Spray the baking sheet with butter or use parchment paper so that the crackers do not stick to the baking pan. The cheese and almonds give the crackers a nutty flavor I enjoyed. These paired well with a tomato basil soup.
