    Not bad, but didn’t love it. I used generous amounts of salt, paprika, black pepper, and thyme since others have said it could be bland. Also subbed cherry tomatoes for sundried ones and added stewed red bell peppers and used the oil from that jar instead. I liked it but wish I’d made pasta or rice to go with it.

    This is great - I used smoked paprika and loved the subtle tomato taste it has by using the oil from the jar; I would have never thought of that. I also put the chicken over some Spanish rice which was a perfect addition. Satisfying and healthy meal.

    This was good but could use a little more flavor. Needed 3-4 tablespoons of oil, 2 is not enough. Maybe more salt? I added garlic, as well.

    It was good. I took others’ advice and added some fresh grated ginger and turmeric, which added some nice flavor. It wasn’t the greatest hit at this house, but it was a decent, healthy meal.

    OMG!!! Are you kidding right now?!? Do you realize how easy this was to both prep and cook? I did take a little culinary license with the seasoning. However, I believe this recipe will forever be a hit!! I even have extra boneless skinless chicken thighs so that I can make this again later in the week! This recipe is amazing!!!

    Served over quinoa and it was fantastic! We used boneless, skinless chicken thighs instead because we prefer the darker meat and it was delicious! This one will definitely be worked into the regular dinner rotation.

    Very tasty! Used chicken breasts, as that’s what we prefer. Also threw in a few cherry tomatoes that needed to be used. Next time, I might try it as a sheet pan meal in the oven. Colorful and healthy!
