  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 3 tablespoons olive oil
  • 8 chicken drumsticks
  • 1 onion (peeled, chopped)
  • 2 green bell peppers (seeded, chopped)
  • 3 cloves garlic (minced)
  • 9 ounces long grain rice
  • 15 ounces chopped tomatoes
  • 1 1/2 cups chicken stock
  • 3 tablespoons fresh parsley leaves (chopped)

Directions

  1. Combine spices and olive oil. Add chicken and toss to coat. Cover and marinate for 1 hour. Heat a large heavy-bottomed frying pan over medium-high heat. Add chicken and marinade. Cook for 6-8 mins, until golden brown on all sides. Remove with a slotted spoon and set aside.
  2. Add onion, peppers and garlic. Cook for 1 min then stir in rice. Cook, stirring, for 2 mins, until coated in oil. Add chopped tomatoes and chicken stock. Season. Reduce heat and return chicken to pan. Cover and simmer for 20 mins, stirring occasionally.
  3. Add chopped parsley. Cook for 5 mins, until rice is cooked.
