Combining the unique flavors and texture of daikon and papaya, this fresh salad is lightly flavored with a lemon rice vinegar dressing and topped with sesame seeds for an asian inspired taste. Ingredients

  • 1 white radish (or daikon)
  • 1 papaya (ripe)
  • chives
  • 1 tablespoon lemon zest
  • 1 teaspoon sesame
  • 40 milliliters rice vinegar

Directions

  1. Grate the daikon and papaya thinly with a mandolin.
  2. Place gratings in 2 separate bowls.
  3. Cover the daikon with icy water. Let soak for about 15 minutes, then drain by squeezing out as much water as possible.
  4. Cut the chives.
  5. Gently mix papaya, daikon, and chives in a bowl.
  6. To serve, add lemon zest and sesame seeds. Sprinkle with rice vinegar.

This crispy salad combines just the right amount of sweetness and tang. My son sprinkled bacon bits on his and thought it was delicious. I kept to the recipe except for doubling the rice vinegar.
