These chewy, cheesy little rolls are unlike anything you'll find in an American bakery, but they sure are delicious.
Ingredients

- nonstick cooking spray
- 1 cup milk (whole or 2%)
- 1/4 cup extra virgin olive oil
- 1 large egg
- 260 grams tapioca flour (260 grams is 2 cups plus 2 Tbsp.)
- 1/2 tsp. salt
- 2 oz. grated Parmesan cheese (2 oz. is about 1/2 cup)
- 2 oz. shredded mozzarella (or cheddar cheese, 2 oz. is about 1/2 cup)

Directions
- Preheat the oven to 400°F. Spray a 24-cavity mini muffin pan very liberally with nonstick cooking spray. Set aside.
- Place the milk, olive oil, egg, tapioca flour, and salt in a blender. Process on high until smooth. Add the cheeses and pulse until incorporated, 4 to 5 times. (Pro Tip: A kitchen scale is highly recommended for this recipe, as tapioca flour is difficult to measure accurately in cups.)
- Pour the mixture into cavities of muffin pan, filling each slightly more than half full.

Ewww far too chewy and dense and greasy for me. Would probably be better with normal flour. My family liked it though.

Really tasty as is, also a good base for adding your own personal flavour additions.
I also tried making a batch in a regular muffin pan instead of mini muffins, and with a 30 minutes cooking time instead of the 20 minute time they turned out great!

Mine turned out great! Puffed up big and very moist. Might add a little chili pepper next time.
