- 500 mL cream (23% fat)
- 10 grams gelatin
- 1 lemon
- 150 grams powdered sugar
- 100 grams frozen berries (I used aronia)
- 4 Tbsp. sugar
- 1 tsp. pectin
- mint leaves (to decorate)

Directions
- Soak the gelatin in 4 tbs of cold water.
- Put the cream in the pan. Add powdered sugar and lemon zest. Cook until it starts to bubble up. Lower the heat.
- In the soaked gelatin add 3 tbs of hot cream. Mix and add the gelatin mixture to the cream pan. Remove from heat and mix until the gelatin has dissolved.
