  • 200 grams wheat flour (regular)
  • 100 grams semolina
  • 1 teaspoon mushroom powder
  • 3 eggs
  • water (A trickle of)
  • 1/2 onions
  • 150 grams pumpkin
  • extra-virgin olive oil
  • 2 white sausage
  • pear jam (2 tblsps.)
  • pepper (Salt)
  • dried mushrooms (Some, porcini)
  • extra-virgin olive oil
  • 1 piece bacon (non smoked)
  • 1/2 onions
  • 3 garlic cloves
  • salt
  • parmesan cheese
  • pepper


  1. 1Tip: For the yeast, prepare yeast one day before baking day.
  2. 2Dissolve yeast in water. Place flour, sugar, and water with yeast in a bowl.
  3. 3Stir well and cover with a cotton cloth.
  4. 4Let stand overnight.
  5. 5For the dough, lightly beat eggs and add all ingredients, except for those used for stuffing.
  6. 6Use an electric mixer or knead by hand for about 30 minutes.
  7. 7Shape dough into a ball and place in a lightly oiled bowl.
  8. 8Cover with a cotton cloth and let rise until doubled in volume.
  9. 9On a lightly floured work surface, use a rolling pin to stretch dough and roll out.
