Description

Rather than relying on a packaged mix, make your own pancake mix from scratch. It will be more economical and also takes only a couple minutes to do. You can even measure out the dry ingredients and keep them in a jar for making pancakes at a moment's notice, adding the eggs and milk when you are ready to get started. Here, the eggs are separated and the whites beaten until stiff, for fluffier results.

Ingredients

3 eggs
140 milliliters milk
1 tablespoon sugar
1 teaspoon sea salt
115 grams wheat flour
1 teaspoon baking powder

Directions

1Separate the egg yolks from the whites.
2In a bowl, add the egg yolks, milk, sugar, and salt.
3Whisk to a smooth mixture.
4In a bowl, combine flour and baking powder, and gradually add to the egg yolk mixture.
5Whisk the egg whites until stiff, then carefully mix into the previous mixture.
6Place a non-stick skillet over medium heat, add 1 tablespoon of butter.
7Once melted, wipe off the excess with a piece of paper towel.
8Pour small spoonfuls of batter into the pan and let them cook until bubbles begin to surface.
9Flip and cook the other side.
10Serve with a scoop of ice cream and fruit to taste.
