Description

Rather than relying on a packaged mix, make your own pancake mix from scratch. It will be more economical and also takes only a couple minutes to do. You can even measure out the dry ingredients and keep them in a jar for making pancakes at a moment's notice, adding the eggs and milk when you are ready to get started. Here, the eggs are separated and the whites beaten until stiff, for fluffier results.

Ingredients

  • 3 eggs
  • 140 milliliters milk
  • 1 tablespoon sugar
  • 1 teaspoon sea salt
  • 115 grams wheat flour
  • 1 teaspoon baking powder

Directions

  1. Separate the egg yolks from the whites.
  2. In a bowl, add the egg yolks, milk, sugar, and salt.
  3. Whisk to a smooth mixture.
  4. In a bowl, combine flour and baking powder, and gradually add to the egg yolk mixture.
  5. Whisk the egg whites until stiff, then carefully mix into the previous mixture.
  6. Place a non-stick skillet over medium heat, add 1 tablespoon of butter.
  7. Once melted, wipe off the excess with a piece of paper towel.
  8. Pour small spoonfuls of batter into the pan and let them cook until bubbles begin to surface.
  9. Flip and cook the other side.
  10. Serve with a scoop of ice cream and fruit to taste.
