You never need to buy a package mix when it's so easy to prepare pancake batter from scratch. Egg, flour, milk, and salt are that's required, plus a little butter for the skillet (and even more for serving). You can scale up this recipe to make as many servings as you need, keeping the ratios the same (simple enough to do). A nonstick skillet works best, but you can also use a cast-iron pan or griddle (these are naturally stick-free). Top as desired.
- 1 eggs
- 1 cup flour
- 1 cup milk
- 1 pinch salt
- Mix all the ingredients together without leaving lumps, if you have some lumps you may use an immersion blender.
- Take a small, nonstick skillet and brush it with butter. Pour a small ladle of the batter into the pan set over medium heat, when the surface starts bubbling, turn and cook the pancake on the other side.
- Top with your choice of toppings.
