  • 4 baby beetroots (small, diced)
  • 8 spring onions (chopped)
  • 1 red chili peppers (red, seeded and chopped)
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons lemon juice
  • 6 tablespoons Flora Cuisine
  • pepper
  • 4 fillets whitefish fillets (un-skinned, firm)
  • flour for dusting (A little plain)

    Directions

    1. First prepare the beetroot salsa. Mix together the diced cooked beetroot, spring onion, chilli, mint, lemon juice and 5 tbsps Flora Cuisine. Season with salt and pepper.
    2. Dust each side of the fish fillets with a little plain flour.
    3. Heat the remaining Flora Cuisine in a large frying pan. Add in the fish fillets and fry on each side for 3–4 minutes until cooked through.
    4. Serve at once with the beetroot salsa.
