Ingredients

  • squid (1 kgr., cleaned)
  • olive oil (to taste)
  • garlic cloves (finely chopped)
  • 1 bunch parsley (coarsely chopped)
  • salt
  • 1 lemon

Directions

  1. Wash the squid and set it aside.
  2. Heat a splash of oil in a frying pan and add the garlic. Fry the garlic just a few minutes, being careful not to overcook.
  3. Add squid and cook slowly until they are tender, then increase the heat slightly to get the squid to a golden brown color.
  4. Season with salt.
  5. Serve the squid with lemon juice to taste and garnished with plenty of parsley.

This was a very appetizing 5 star recipe that has caused us to eat squid more often. It turned out soft, without being chewy, and had a crisp seared outer exterior. The garlic was not over the top and gave it a more enticing flavor.
