Ingredients

  • 7 eggs
  • 1/2 onions (diced)
  • 2 cups fresh spinach
  • 2 tablespoons water
  • 2 tablespoons olive oil (for cooking)
  • 1 1/2 cups almond flour
  • 3/4 cup gluten (free flour)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons rosemary (minced)
  • 1 eggs
  • 2 tablespoons water
  • 1/3 cup olive oil

Directions

  1. 1For The Crust
  2. 2Preheat the oven to 400.
  3. 3Grease pie dish with grapeseed, olive, or coconut oil.
  4. 4Mix dry ingredients.
  5. 5In another bowl mix wet ingredients.
  6. 6Press the crust into the pie dish as thin as you can without it breaking. About 1/4 inch thick.
  7. 7For The Filling
  8. 8Whisk together eggs and water.
  9. 9Heat up the olive oil in a pan over medium heat, and saute the onion with salt.
  10. 10Then add the spinach for a few minutes until it cooks down.
  11. 11Spoon onion and spinach into the quiche crust.
  12. 12Then pour egg mixture into the crust.
  13. 13Bake for 25-30 minutes until eggs are firm.
