Ingredients

  • 7 eggs
  • 1/2 onions (diced)
  • 2 cups fresh spinach
  • 2 tablespoons water
  • 2 tablespoons olive oil (for cooking)
  • 1 1/2 cups almond flour
  • 3/4 cup gluten (free flour)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons rosemary (minced)
  • 1 eggs
  • 2 tablespoons water
  • 1/3 cup olive oil

Directions

  1. For The Crust
  2. Preheat the oven to 400.
  3. Grease pie dish with grapeseed, olive, or coconut oil.
  4. Mix dry ingredients.
  5. In another bowl mix wet ingredients.
  6. Press the crust into the pie dish as thin as you can without it breaking. About 1/4 inch thick.
  7. For The Filling
  8. Whisk together eggs and water.
  9. Heat up the olive oil in a pan over medium heat, and saute the onion with salt.
  10. Then add the spinach for a few minutes until it cooks down.
  11. Spoon onion and spinach into the quiche crust.
  12. Then pour egg mixture into the crust.
  13. Bake for 25-30 minutes until eggs are firm.
