This was very very delicious. Didn't have celery so used good amount of fennel seed. Added Bavarian seasoning. Making this often from now on.' I did it up with some saffron mashed potatoes. Outstanding.

This chicken turned out PERFECTLY!! I've made it a number of times, with great success. Just be careful not to put too much salt on it. I used Old Bay seasoning once because I didn't have any thyme, definitely didn't need the salt!!
